How to Make Cheesy Stuffed Chicken Breasts
Slice each chicken breast horizontally almost all the way through (butterfly). Season both sides with salt, pepper, and garlic powder.
In a bowl, mash the Laughing Cow cheese wedges until smooth. Stir in spinach, sun-dried tomatoes, Parmesan, and mozzarella until well combined.
Evenly divide the filling between chicken breasts. Close and secure with toothpicks.
Heat olive oil in a large skillet over medium heat. Sear the chicken 2–3 minutes per side until lightly golden.
Spray a baking dish with cooking spray and add the chicken. Bake at 400 degrees F. for 15-20 minutes, or until the internal temperature reaches 165 degrees F.
