Preheat oven to 400 degrees F. Spray a baking dish with nonstick cooking spray.
Slice each chicken breast horizontally almost all the way through (butterfly). Season both sides with salt, pepper, and garlic powder.
In a bowl, mash the Laughing Cow cheese wedges until smooth. Stir in spinach, sun-dried tomatoes, Parmesan, and mozzarella until well combined.
Evenly divide the filling between chicken breasts. Close and secure with toothpicks.
Heat olive oil in a large skillet over medium heat. Sear the chicken 2-3 minutes per side until lightly golden.
Add the chicken breast to the baking dish and bake for 15-20 minutes, or until the internal temperature reaches 165 degrees F.
