Cheesy Stuffed Chicken Breasts - A Low Carb, Weight Watchers Friendly Dinner

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt, pepper, and garlic powder
  • 1/2 cup part-skim mozzarella cheese
  • 2 Laughing Cow light cheese wedges
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons grated Parmesan cheese
  • 2 teaspoons olive oil

Instructions

  • Preheat oven to 400 degrees F. Spray a baking dish with nonstick cooking spray.
  • Slice each chicken breast horizontally almost all the way through (butterfly). Season both sides with salt, pepper, and garlic powder.
  • In a bowl, mash the Laughing Cow cheese wedges until smooth. Stir in spinach, sun-dried tomatoes, Parmesan, and mozzarella until well combined.
  • Evenly divide the filling between chicken breasts. Close and secure with toothpicks.
  • Heat olive oil in a large skillet over medium heat. Sear the chicken 2-3 minutes per side until lightly golden.
  • Add the chicken breast to the baking dish and bake for 15-20 minutes, or until the internal temperature reaches 165 degrees F.
