The Ingredients

Mission Carb Balance Spinach Tortillas: These tortillas are low in carbs and high in fiber, helping keep you full without spiking blood sugar. The spinach variety also adds nutrients and a festive green color.

Light Laughing Cow Cheese Wedges: Each wedge is low in calories and fat, making it a creamy spread that fits easily into Weight Watchers plans. It adds richness without the heaviness of traditional cream cheese.

Ranch Seasoning: Ranch seasoning provides bold flavor with virtually no calories. It allows you to skip heavier dressings or mayo while still getting that classic ranch taste.

Reduced-Fat Mexican Cheese: This cheese adds satisfying creaminess and protein while keeping fat and calories lower than regular cheese.

Ham: Lean ham is a high-protein, low-point choice on Weight Watchers that makes the pinwheels more filling. It brings savory flavor without adding many calories.

Red Bell Pepper: Red bell pepper adds crunch, color, and natural sweetness while being completely low calorie. It’s packed with vitamin C and antioxidants.

Green Bell Pepper: Green pepper adds freshness and texture without adding carbs or points. It also boosts fiber and nutrients in every bite.

Fresh Herbs: Using fresh herbs like rosemary or parsley gives the platter a holiday greenery effect and adds aroma without any calories.

How to Make Christmas Tree Pinwheels

Begin by stirring together the Laughing Cow wedges and ranch seasoning until smooth. This creates a tangy, creamy layer that helps everything stick together.

Mix the chopped ham, diced red pepper, diced green pepper, and reduced-fat Mexican cheese in a separate bowl.

Spread the ranch cheese mixture onto each spinach tortilla, then sprinkle the ham and pepper mixture evenly over the top.

Roll the tortillas tightly into logs and refrigerate them for 30–60 minutes so they slice cleanly.

Cut each tortilla into 8 pieces. Remove the end pieces if they don’t have enough filling.

Arrange the pinwheels on a platter in rows, forming a Christmas tree shape. Tuck fresh rosemary sprigs along the edges to look like evergreen branches.

I used a slice of cheese to cut out a star shape and placed it on the top of the tree.

Serving Suggestions

Add a small bowl of light ranch or Greek yogurt dip on the side.

Fill in any empty spaces with extra cherry tomatoes or fresh herbs for a fuller look.

Chill until ready to serve, these hold up beautifully for hours!
