Christmas Tree Pinwheels

Ingredients

  • 4 Mission Carb Balance spinach tortillas
  • 4 light Laughing Cow cheese wedges
  • 1 1/2 teaspoons ranch seasoning
  • 1/2 cup reduced-fat Mexican cheese, shredded
  • 6 oz. lean deli ham
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • Fresh rosemary and a slice of cheese

Instructions

  • Begin by stirring together the Laughing Cow cheese wedges and ranch seasoning until smooth.
  • Mix the chopped ham, red pepper, green pepper, and reduced-fat Mexican cheese in a separate bowl.
  • Spread the ranch cheese mixture onto each spinach tortilla, then sprinkle the ham and pepper mixture evenly over the top.
  • Roll the tortillas tightly into logs and refrigerate them for 30-60 minutes so they slice cleanly.
  • Cut each tortilla into 8 pieces. Remove the end pieces if they don't have enough filling.
  • Arrange the pinwheels on a platter in rows, forming a Christmas tree shape. Tuck fresh rosemary sprigs along the edges to look like evergreen branches.
  • Cut a star shape into the slice of cheese and place it on top of the tree.
