Baked Chicken with Feta

This chicken is baked with feta cheese, tomatoes, and fresh garlic giving it an out of this world flavor!

Just the smell of this dish cooking will have you counting down until dinner time.

It’s crazy that a dish so easy to make can taste so good.

Another bonus is that it’s low in points, only 3 points per serving.

How I kept this recipe light:

The only ingredient that adds points is the feta cheese. Since that was the case I used full fat feta cheese.

Regular fat feta cheese melts better than the reduced-fat feta cheese so I thought it was worth the points.

I used my food scale to make sure I had exactly 3.5 ounces of feta cheese, which is 12 points.

How to make Baked Chicken with Feta:

The first thing I did was cut up the vegetables. I cut the cherry tomatoes in half and added them to a medium size mixing bowl.

Next, I sliced the red onion, minced the garlic, and weighed the feta cheese. I added all of it to the mixing bowl with the tomatoes.

I added a little salt and black pepper then used tongs to mix everything together.

Spray a baking pan with olive oil spray then add the chicken breasts. Season the chicken with salt and pepper.

In a small bowl, mix together the garlic powder, onion powder, oregano, parsley, basil, and thyme. Mix together then season the chicken.

Pour the tomato mixture over the chicken, then bake at 400 degrees for 25-30 minutes.

I like using thin cut chicken breasts so my chicken was ready in 25 minutes. Make sure your chicken is cooked to 165 degrees F.

Since this is so low in points I like to serve it with pasta sometimes.

It’s also delicious on its own for a low point meal.

Ingredients
  • 1 lb. boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 3 1/2 oz. feta cheese
  • 2 cloves garlic, minced
  • 1/8 cup red onion, sliced
  • Salt and pepper, to taste
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon oregano
  • 1/8 teaspoon parsley
  • 1/8 teaspoon basil
  • 1/8 teaspoon thyme
  • Olive oil cooking spray
Instructions
  1. Preheat oven to 400 degrees F.

  2. In a medium mixing bowl add the tomatoes, feta cheese, red onion, and garlic. Season with salt and pepper, then mix together.

  3. In a small bowl mix together the garlic powder, onion powder, oregano, parsley, basil, and thyme.

  4. Spray a baking pan with olive oil spray. Add the chicken breasts and season them with salt and pepper. Also season the chicken with the garlic powder mix.

  5. Pour the tomato mixture over the chicken.

  6. Bake 25-30 minutes or until chicken has an internal temperature of 165 degrees F.
