Chicken Cheesesteak Sandwich (Instant Pot or Slow Cooker)

I love a good cheesesteak sandwich! It’s probably my favorite sandwich. I thought I would lighten it up by using chicken instead of beef.

There used to be this bar/restaurant by my house and every time I went I would get the cheesesteak sandwich.

Then, one day…they didn’t have it. I was so sad! But what they did have was a chicken cheesesteak sandwich.

I was so bummed they didn’t have my sandwich anymore, I almost refused to try the chicken cheesesteak sandwich. But I gave it a try and I loved it!

Can you believe that this sandwich is only 6 points for blue and purple, 9 points for green? It’s filling and delicious!

You can make the chicken in the slow cooker or the Instant Pot. Whichever you prefer.

I bought Pepperidge Farm top sliced hot dog buns. They are 4 points each. If you can’t find those exact buns make sure it doesn’t change the points.

For the cheese I used Sargento ultra thin provolone cheese. I only used 1 slice for each sandwich. To make sure the cheese covered the sandwich I tore the slice in half and spread it across the sandwich.

It was the perfect amount of cheese without adding a ton of points.

I did not cook the green pepper and onions in the Instant Pot. I like them to be slightly crunchy still so I cook them on the stovetop while the chicken is cooking.

To melt the cheese I put the sandwiches under the broiler. This helped get the bread a little toasted too.

Chicken Cheesesteak Sandwich

Yield: 4 sandwiches (6 points each for blue and purple, 9 points for green)

Ingredients
  • 1 lb. boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 green pepper, cut into slices
  • 1 onion, cut into slices
  • 4 Pepperidge Farm top sliced hot dog buns
  • 4 slices Sargento ultra thin provolone cheese
Instructions
For the Instant Pot:
  1. Add chicken broth and chicken to the Instant Pot. Add the Italian seasoning, garlic powder, onion powder, salt and pepper.

  2. Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 10 minutes.

  3. When the time is up let the pressure manually release for 10 minutes, then release the pressure and remove the lid.

  4. Remove the chicken and shred it with a fork. Place the chicken back in the liquid until you are ready to serve it.

  5. While the chicken is cooking spray a pan with no-stick spray and cook onion and green pepper until crisp/tender.

  6. Assemble sandwiches by adding the chicken to the bun, onion, green peppers and a slice of cheese. Place under the broiler until the cheese is melted. Enjoy!

For the slow cooker:
  1. Add 1/2 cup chicken broth and the chicken to the slow cooker. Add the Italian seasoning, garlic powder, onion powder, salt and pepper.

  2. Place the lid on the slow cooker and cook on low for 6 hours.

  3. Remove the chicken and shred it with a fork. Place the chicken back in the liquid until you are ready to serve it.

  4. Spray a pan with no-stick spray and cook onion and green pepper until crisp/tender.

  5. Assemble sandwiches by adding the chicken to the bun, onion, green peppers and a slice of cheese. Place under the broiler until the cheese is melted. Enjoy!
