Ham & Cheese Crustless Quiche – Weight Watchers Freestyle

I love easy recipes, and this is one of them! With just a few ingredients it’s very easy to throw together.

One thing that helps me stay on track is having my meals planned out. What I love about this recipe is it makes six servings. I cut the quiche into six pieces, then wrap up the extra pieces in aluminum foil.

Then I have breakfast ready for a few days. I just take out my slice of crustless quiche and pop it in the microwave for about 30 seconds. It doesn’t get much easier than that.

I cut the ham and cheese crustless quiche into 6 servings. It is only 1 Freestyle point per serving.

I usually eat my crustless quiche with a small bowl of fruit. Sometimes I will toast a piece of bread and add a couple of sprays of I Can’t Believe It’s Not Butter.

The bread I use is 2 Freestyle points and the spray butter is 0 Freestyle points. That’s only 3 Freestyle points for a large and filling breakfast.

To make this ham & cheese crustless quiche you just need eggs, diced ham, reduced-fat shredded cheese and skim milk. I also add salt, pepper, garlic powder and onion powder.

I buy Kroger diced ham for this recipe. I like that it’s cut into small pieces, plus it’s only 1 Freestyle point for a half cup. When I take the ham out of the bag I give it a good squeeze to get rid of any extra liquid.

For the shredded cheese I used reduced-fat Mexican cheese. Reduced-fat cheddar cheese also tastes great in this crustless quiche.

It takes 35-40 minutes to bake, that’s why I usually make this on Sundays. It’s kind of like my food prep for the work week.

Ingredients
  • 6 eggs
  • 1/2 cup skim milk
  • 1/2 cup diced ham
  • 1/2 cup reduced-fat shredded cheese (cheddar or Mexican)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
Instructions
  1. Preheat oven to 350 degrees F.

  2. In a mixing bowl whisk together the eggs and milk.

  3. Add the ham, cheese, salt, pepper, garlic powder and onion powder.

  4. Spray a pie pan with non-stick cooking spray.

  5. Add the egg mixture and bake 35 to 40 minutes.
