Baked Oatmeal Bars – Weight Watchers

I’ve been wanting to come up with an oatmeal recipe for some time now, and I’m so happy I did!

My Baked Oatmeal Bars turned out great! They are perfect for a snack or breakfast.

I love that eggs are 0 points with Weight Watchers, but like a lot of people, I sometimes get sick of them for breakfast.

This is a great alternative if you are egged out. And these Baked Oatmeal Bars are only 2 Freestyle points per serving.

I baked this in an 8×8 pan and cut it into 9 servings. One serving is very filling, especially if you have some fruit with it.

I had some very ripe bananas that I knew I could use. Last week my daughter asked me to make my banana pudding.

I was more than happy to oblige. Here’s the thing though, she didn’t want me to add bananas.

Um….ok?

Well, I had already bought the bananas for it, but I knew they wouldn’t go to waste. So instead of using sugar-free vanilla pudding, I used sugar-free banana pudding. It was delicious even without the bananas in it.

I have a friend that makes Baked Oatmeal Bars and I love them. I made some changes to her recipe to make them even more Weight Watchers friendly.

One thing I changed was I didn’t use regular peanut butter. Instead, I used PB2 Powdered Peanut Butter.

You can order it through Amazon or find it in most grocery stores in the peanut butter aisle.

Her original recipe used regular maple syrup, but I used sugar-free maple syrup. That saved the recipe 7 points!

I think it is all about making simple changes so that food is healthier and lower in points. Then we can still eat what we enjoy. Check out the recipe below!

Baked Oatmeal Bars – Weight Watchers Freestyle

Yield: 9 Servings (2 points per serving for blue and green, 1 point per serving for purple)

Ingredients
  • 4 tablespoons PB2 Powdered Peanut Butter
  • 3 tablespoons water
  • 2 overripe bananas, mashed
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup sugar-free maple syrup
  • 1/2 cup skim milk
  • 1 egg
  • 1 1/2 cups quick cooking oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 mini sugar-free Hershey’s dark chocolate bars
Instructions
  1. Preheat oven to 350 degrees F.

  2. In a large bowl add the PB2 Powdered Peanut Butter and water. Mix together until it is a smooth consistency.

  3. Add the bananas, vanilla extract, egg and sugar-free maple syrup. Mix together with the peanut butter. Then stir in the milk.

  4. In a medium bowl add the quick cooking oats, baking powder, salt and cinnamon. Mix together.

  5. Add the oat mixture to the batter mixture and stir thoroughly.

  6. Spray an 8×8 pan with no-stick cooking spray.

  7. Pour the oatmeal mixture into the pan and bake for 30 minutes.

  8. Remove from oven and let cool for 10 minutes.

  9. Melt the sugar-free chocolate in the microwave then drizzle onto the oatmeal bars.
