Although I’m not a big asparagus fan, bacon wrapped “anything” is delicious!

This is actually the only way I will eat asparagus. I’ve tried it so many ways, and I’m just not a fan. I had it one time grilled with maple syrup. I thought for sure I would like it. Nope!
I’ve mentioned before that I hated vegetables as a kid. Asparagus was what I hated the most!
I wasn’t allowed to get up from the table until all of my vegetables were eaten. I spent a lot of time sitting at the dinner table.
Until one day I came up with a plan. I cut my veggies into small pieces and I tucked them under my plate. I really thought I was so smart. I told my mom I was done and asked if I could be excused from the table. She said yes. THE PLAN WORKED!!
I continued to hide my veggies under my plate for a few years. It wasn’t until I was an adult that I realized when my mom picked up my plate she saw the circle of veggies.
I asked her why she never said anything to me and the answer made sense. She said she was so sick of fighting with me to eat my vegetables that she let me think I got away with it. We had a good laugh about that.
Now back to the bacon wrapped asparagus. This is really easy to make. I baked it in the oven, but it could also be cooked on the grill.
First you need to clean off the asparagus and cut the bottom half inch off. I grouped my bacon into three’s.
Then I wrapped each group of three in a slice of bacon. I used center cut bacon. It’s only 2 Freestyle points for 3 slices.
Next I seasoned it with salt and pepper. Then I popped it in the oven for 20 minutes. That’s it! If you like your bacon on the crispy side you can switch it to broil for he last 5 minutes of cooking time.
Although it’s only one piece of bacon for 3 pieces of asparagus, the flavor of the bacon soaks into all of the asparagus.
Bacon Wrapped Asparagus - Weight Watchers
Yield: 3 groups of bacon wrapped asparagus = 2 Freestyle points
Ingredients:
- Fresh Asparagus
- Center cut bacon
- Salt and pepper
Directions:
- Preheat oven to 400 degrees F.
- Clean asparagus and cut the bottom 1/2 inch off.
- Put asparagus into groups of three. Wrap one piece of bacon around each group and place onto a cooking sheet. Sprinkle with salt and pepper.
- Place in the oven for 20 minutes.
