My husband said that this bagel looks like a smiley face. Now that is all I see when I look at the picture. But I also think about how delicious it was!

I have said before that I am not a fan of salmon. That remains true, however smoked salmon I can deal with. Plus my daughter really likes salmon. Since she’s a trooper and eats most of my Weight Watchers dishes I figured I could make something special for her.
For this recipe I used a mini bagel, mainly because it is only 3 Freestyle points. A regular bagel can cost you around 9 Freestyle points. I made it open-face because I felt like I was eating twice as much. I think it tricked my stomach too because I was definitely full.
The smoked salmon I bought in the seafood section at Kroger. Besides toasting the bagel there is no cooking required for this recipe. The cream cheese, smoked salmon, red onion, cucumber and dill taste great together. The capers give it a little taste of salt. Are you hungry yet?
The total time spent in the kitchen for this was 15 minutes. That includes clean up time!
Now let’s talk about points. As I already mentioned one (whole) mini bagel is 3 Freestyle points. I also used 1 tablespoon of low fat cream cheese which was 1 Freestyle point. The cucumber, red onion, smoked salmon and dill are all 0 points. That means this open-face smoked salmon bagel is only 4 Freestyle points. This is a pretty filling meal for only 4 Freestyle points.
Here are some of the things I used for this recipe:
Open-Face Smoked Salmon Bagel
Yield: 1 Open-Face Bagel (this is 2 pieces, the top and bottom of the bagel plus the ingredients) – 4 Freestyle points
Ingredients:
- 1 mini bagel (I used Kroger brand)
- 1 tablespoon light cream cheese
- Smoked salmon (I used 0 point smoked salmon so I didn’t weigh it)
- 1 slice of red onion
- Cucumber slices
- 1 teaspoon capers, drained
- 1/8 teaspoon dried dill
Directions:
- Cut the mini bagel in half and toast it.
- Spread cream cheese on both bagel slices.
- Add the dried dill to the cream cheese.
- Add the smoked salmon, red onion and capers.
