I love using the slow cooker during the week. Actually, I love it all the time, but especially during the week. This pork cooks perfect in the slow cooker plus it’s easy to prepare.
While the pork is delicious, I think my favorite part of this meal is the pickled onions. My husband loves them too. He eats them by the spoonful once dinner is done. They really are that good!
Pork Tenderloin Carnitas
Yield: 5 Servings (3 ounces of pork per serving, 2 SmartPoints each)
Ingredients:
For the carnitas:
- 1 pound pork tenderloin
- 1 onion, sliced
- 1 t. chili powder
- 1 t. cumin
- 1 t. minced garlic
- 1/2 t. oregano
- 1 t. salt
- 1/2 t. pepper
- 2 T. lime juice
- 2 cups chicken broth
For the pickled onions:
- 1 onion, chopped
- 1/3 cup cilantro, chopped
- 1/2 cup vinegar
Directions:
- Place the sliced onion in the bottom of a 4 quart slow cooker. Place the pork tenderloin ton top of the onions.
- In a small bowl mix together the chili powder, cumin, oregano, salt and pepper.
- Rub the minced garlic onto the pork tenderloin. Then ad the seasonings to the pork.
- Pour in the chicken broth and lime juice. Let cook in slow cooker on low 4 to 6 hours.
For the pickled onions:
- In a bowl, mix together the chopped onions, cilantro and vinegar.
This pork is delicious with the pickled onions. You can also add a taco shell. I added one and it was delicious! Just make sure to add points for the shell. I also added a small amount of queso fresco cheese.
