Weight Watchers Stuffing

Yield: 10 servings - 3 points per serving for blue, green and purple

Ingredients

  • 12 oz. Jennie-O turkey sausage patties
  • 1 cup celery, chopped
  • 1 cup onion, chopped
  • 10 slices 1 point bread that has been dried out (I used Sara Lee 45 calorie multi-grain bread)
  • 1 cup fat-free chicken broth
  • 1 egg
  • 1 teaspoon sage
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 teaspoon parsley
  • salt and pepper, to taste

Instructions

  • Preheat oven to 350 degrees F.
  • Brown the turkey sausage, breaking it up into small pieces. Add the celery and onion, cook for 5 minutes.
  • Cut the dried out bread into 1/2" pieces. Add to the turkey sausage with the seasonings and stir together.
  • Whisk together the egg and chicken broth.
  • Spray a 9x13 pan with no-stick cooking spray, then add the stuffing mixture.
  • Slowly pour the egg/broth mixture over the stuffing. Make sure to get all of the bread wet.
  • Bake covered for 20 minutes, then remove the cover and bake 10 more minutes.
