Pulled Pork Nachos

Ingredients

  • 1 Ole Xtreme Tortilla
  • Salt, to taste
  • 1 serving leftover pulled pork

  • Red onion, chopped
  • 1/4 cup reduced-fat Mexican cheese, shredded
  • Cilantro
  • 1 tablespoon fat-free sour cream
  • 1 tablespoon sugar-free BBQ sauce

Instructions

  • Preheat oven to 350 degrees F.
  • Cut the Ole Xtreme tortilla into "chip" size pieces. Spray both sides with no-stick cooking spray and season with salt. Bake 7-9 minutes, or until they are crispy.
  • Add the tortilla chips to a baking dish. Top with the pulled pork, red onions and Mexican cheese. Bake for 10 minutes, or until the cheese is melted.
  • Mix together the sour cream and BBQ sauce.
  • Let the nachos cool for a minute, then add the creamy BBQ sauce and cilantro. Enjoy!
