Ingredients
  • 1 lb. Russet potatoes, cleaned and cut into 1/2 inch cubes
  • 2 teaspoons extra virgin olive oil
  • 1/4 cup red pepper, chopped
  • 1/4 cup green pepper, chopped
  • 1/4 cup yellow onion, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Heat a nonstick skillet over medium heat and add the olive oil. Add the potatoes to the skillet, then season with salt, pepper, and garlic powder.

  2. Cook the potatoes for 10 minutes, stirring occasionally.

  3. At the end of the 10 minutes, add the green pepper, red pepper, and onion. Cook for an additional 5 minutes, or until the potatoes are tender.

  4. Serve the potatoes hot with your favorite breakfast foods.
