Peanut Butter Pudding

Yield: 4 servings (each serving is 1/2 cup - 3 points per serving for blue, green and purple)

Ingredients

  • 1/4 cup PB2 powder
  • 1/4 cup granulated Splenda
  • 2 tablespoons cornstarch
  • Pinch of salt
  • 2 cups skim milk

Instructions

  • Add the PB2 powder, Splenda, cornstarch and pinch of salt to a saucepan. Whisk it together well.
  • Slowly add in the skim milk while whisking. Cook over medium/low heat until the pudding thickens. Set aside and let cool, then serve.
