Margherita Pizza

Ingredients

  • 1 cup fat-free Greek yogurt
  • 1 cup self-rising flour
  • 15 oz. can of crushed tomatoes
  • 1 teaspoon extra virgin olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon oregano
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 oz. fresh mozzarella cheese, broken up into quarter size pieces
  • Fresh basil

Instructions

  • Preheat oven to 450 degrees F.
  • Add the olive oil to a small nonstick saucepan over medium heat. Sauté the garlic for 30 seconds, then add the crushed tomatoes, oregano, salt, and pepper. Cook over medium-low heat while you get the dough ready.
  • Add the self-rising flour and yogurt to a medium mixing bowl. Mix together with a rubber spatula and shape into a ball.
  • Sprinkle your work surface with flour and add the dough. Knead the dough for 1 minute or until it does not leave dough on your hands.
  • Use a rolling pin to roll out the dough into a 12" circle.
  • Place the dough on a baking sheet lined with parchment paper.
  • Top the dough with 1/3 cup of the tomato sauce. Add the fresh mozzarella then bake 10-12 minutes, or until the crust is golden.
  • Top with fresh basil.
