Light and Creamy Strawberry Shortcake

Ingredients

cups
strawberries, sliced
1
teaspoon
lemon juice
3
ounces
angel food cake, cubed
1
cup
fat-free Greek yogurt
2
tablespoons
sugar free vanilla pudding mix
2
tablespoons
plain unsweetened almond milk
Optional: Light whipped cream
Instructions
Slice the strawberries and toss with lemon juice. Let sit 5-10 minutes until juicy.
In a bowl, mix Greek yogurt with dry sugar-free pudding mix. Stir until smooth and thick.
If it gets too thick, add a splash (1 tbsp at a time) of almond milk until it’s creamy but still spoonable.
In four small jars or cups - layer the cubed angel food cake, strawberries, and pudding/yogurt. Repeat the layers.
Optional: Top with light whipped cream.
