Light and Creamy Strawberry Shortcake

Ingredients

  • 2 cups strawberries, sliced
  • 1 teaspoon lemon juice
  • 3 ounces angel food cake, cubed
  • 1 cup fat-free Greek yogurt
  • 2 tablespoons sugar free vanilla pudding mix
  • 2 tablespoons plain unsweetened almond milk
  • Optional: Light whipped cream

Instructions

  • Slice the strawberries and toss with lemon juice. Let sit 5-10 minutes until juicy.
  • In a bowl, mix Greek yogurt with dry sugar-free pudding mix. Stir until smooth and thick.
  • If it gets too thick, add a splash (1 tbsp at a time) of almond milk until it’s creamy but still spoonable.
  • In four small jars or cups - layer the cubed angel food cake, strawberries, and pudding/yogurt. Repeat the layers.
  • Optional: Top with light whipped cream.
