Lemon Chicken Crunch Salad

Ingredients

For the salad:

  • 3 cups Romaine lettuce, chopped
  • 1 cup boneless, skinless chicken breast, cooked and shredded
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 2 tablespoons reduced-fat feta cheese
  • 2 tablespoons red onion, thinly sliced
  • 1 tablespoon fresh parsley or basil
  • 10 Simple Truth parmesan crisps

For the dressing:

  • 1 1/2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper, to taste

Instructions

  • Add lettuce, chicken, tomatoes, cucumber, red onion, and herbs to a large bowl.
  • In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, garlic, salt, and pepper.
  • Pour the dressing over the salad and toss until evenly coated.
  • Top with feta cheese and parmesan crisps just before serving.
