Ingredients

For the Apple Filling

  • 4 apples, peeled, cored, and thinly sliced
  • 1/2 cup pumpkin puree
  • 2 tablespoons Swerve brown sugar
  • 1 tablespoon all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

For the Crisp Topping

  • 3/4 cup old-fashioned rolled oats
  • 2 tablespoons all-purpose flour
  • 2 tablespoons Swerve brown sugar
  • 1/2 teaspoon pumpkin pie spice
  • 2 tablespoons light butter, melted
  • 1 tablespoon unsweetened applesauce
  • Pinch of salt

Instructions

  • Preheat the oven to 350°F. Spray an 8×8-inch baking dish with nonstick cooking spray.
  • Add the sliced apples, pumpkin puree, brown sugar, flour, pumpkin pie spice, cinnamon, vanilla extract, lemon juice, and salt to a large bowl.
  • Stir until the apples are evenly coated with the pumpkin mixture.
  • Pour the apple mixture into the prepared baking dish and spread it into an even layer.
  • In a separate bowl, combine the oats, flour, brown sugar, pumpkin pie spice, and salt.
  • Stir in the melted light butter and applesauce until the mixture becomes crumbly.
  • Sprinkle the oat mixture evenly over the apples.
  • Bake for 40–45 minutes, or until the apples are tender and the topping is golden brown.
  • Let the crisp cool for about 10 minutes before serving.
