Ingredients

For the fruit filling:

  • 2 cups fresh strawberries, sliced
  • 2 cups fresh blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon granulated sweetener
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

For the crisp topping:

  • 1 cup quick oats
  • 2 tablespoons granulated sweetener
  • 1 1/2 tablespoons light butter, melted
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  • Preheat oven to 350 degrees F. Spray an 8x8 baking dish with nonstick cooking spray.
  • In a bowl, combine strawberries, blueberries, sweetener, cornstarch, lemon juice, and vanilla extract.
  • Pour the fruit mixture into the baking dish.
  • In another bowl, mix oats, sweetener, and salt. Stir in melted light butter until crumbly.
  • Sprinkle topping evenly over the fruit.
  • Bake 25-30 minutes until bubbly and golden. Let cool slightly before serving.
