Fruit Salsa and Cinnamon Crisps

Ingredients

For the Cinnamon Crisps:

  • 2 Ole Xtreme High Fiber Tortillas
  • 3 tablespoons granulated Splenda
  • 1 teaspoon cinnamon

For the Fruit Salsa:

  • 1 apple (I use honey crisp)
  • 1 tablespoon fresh lemon juice
  • 1 lb. strawberries
  • 6 oz. raspberries
  • 1 peach
  • 2 tablespoons Smucker's sugar free strawberry jam

Instructions

For the Cinnamon Crisps:

  • Preheat oven to 350 degrees F.
  • Cut the tortillas into triangles and add them to a baking sheet.
  • In a small bowl, mix together the granulated Splenda and cinnamon.
  • Spray tortillas with cooking spray, then add the cinnamon mixture. Flip the tortillas and repeat on the other side.
  • Bake 7-9 minutes, or until the tortillas are crispy.

For the Fruit Salsa:

  • Peel apple, then cut it into small pieces. Add it to a small mixing bowl, then add the lemon juice and stir together.
  • Cut the strawberries and peach into small pieces and add to the apple.
  • Cut the raspberries in half and add to the other fruit.
  • Place the jam in the microwave for 10 seconds, then add it to the fruit. Stir together the jam and the fruit. Enjoy!
