Line a muffin tin with silicone or paper muffin cups.
Place a tablespoon of granola at the bottom of each muffin cup.
In a small bowl, mix together the Greek yogurt, vanilla extract, and strawberries.
Spoon the yogurt mixture over the granola, filling the cups about 3/4 of the way full.
Optional: Add some toppings to each cup. I like to add chopped strawberries, granola, or chocolate chips.
Place the muffin tin in the freezer for 2 hours or until they're completely frozen.
Take the muffin cups out of the tin and let them sit for a few minutes before removing the paper or silicone cups.
