Easy Refried Beans

Ingredients

  • 2 (15.5 oz.) cans of pinto beans
  • 1 teaspoon extra virgin olive oil
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/2 cup water

Instructions

  • Drain and rinse the pinto beans.
  • Add the oil to a heated saucepan. Sauté the onion until it's translucent. Stir in the garlic and cook for 30 seconds.
  • Add the chili powder, cumin and salt. Stir. Pour in the pinto beans and water. Bring to a simmer and cook for 7 minutes.
  • Turn off the heat and add the lime juice. Use a potato masher to break down the beans until creamy.
