Easy Chicken Fajita Foil Packets

Ingredients

  • 1 lb. boneless, skinless chicken breast, cut into thin slices
  • 2 bell peppers, sliced (red, yellow, or green)
  • 1 medium onion, sliced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 425 degrees F or prepare grill for medium-high heat.
  • Tear off four large sheets of heavy-duty aluminum foil.
  • In a large bowl, combine chicken, peppers, and onions.
  • Add olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper. Toss until everything is evenly coated.
  • Divide the chicken and vegetable mixture evenly among the foil sheets.
  • Fold foil over the mixture and tightly seal the edges to create packets.

For the oven:

  • Place foil packets on a baking sheet. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165 degrees F.

For the grill:

  • Place foil packets directly on the grill grates. Grill over medium-high heat for 20-25 minutes, flipping once halfway through. Check that the chicken reaches 165 degrees F before serving.
