Preheat the oven to 400 degrees F. and line a baking sheet with parchment paper.
In a bowl, mix all of the meatball ingredients until combined.
Roll into 16 evenly sized meatballs and place on the lined baking sheet.
Bake for 18-20 minutes or until the internal temperature reaches 165 degrees F.
In a skillet, melt butter and saute garlic until fragrant. Stir in the cream and parmesan cheese. Bring to a light simmer while stirring.
Add sun-dried tomatoes and spinach, cooking until spinach wilts.
Add the meatballs to the skillet and coat in the sauce. Serve warm and enjoy!
