Creamy Tuscan Garlic Parmesan Meatballs

Ingredients

For the meatballs:

  • 1 lb. lean ground chicken
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons almond flour
  • 1 egg
  • 3 cloves garlic
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

For the Tuscan sauce:

  • 1 tablespoon light butter
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach
  • 3/4 cup half and half
  • 1/2 cup grated parmesan cheese
  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 400 degrees F. and line a baking sheet with parchment paper.
  • In a bowl, mix all of the meatball ingredients until combined.
  • Roll into 16 evenly sized meatballs and place on the lined baking sheet.
  • Bake for 18-20 minutes or until the internal temperature reaches 165 degrees F.
  • In a skillet, melt butter and saute garlic until fragrant. Stir in the cream and parmesan cheese. Bring to a light simmer while stirring.
  • Add sun-dried tomatoes and spinach, cooking until spinach wilts.
  • Add the meatballs to the skillet and coat in the sauce. Serve warm and enjoy!
