Creamy Burst Cherry Tomato Chicken Pasta

Ingredients

  • 1 lb. boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups cherry tomatoes
  • 8 oz. penne pasta
  • 3 cloves garlic, minced
  • 2 teaspoons olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup chicken broth
  • 2 tablespoons light cream cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil
  • Salt and pepper, to taste

Instructions

  • Cook the pasta according to package directions and reserve ½ cup of pasta water.
  • Heat olive oil in a large skillet over medium heat. Add chicken, Italian seasoning, salt, and pepper. Cook until the chicken is fully cooked.
  • Add garlic and cherry tomatoes. Cook 5-7 minutes, stirring occasionally, until the tomatoes burst and create a sauce.
  • Stir in chicken broth and light cream cheese until smooth.
  • Add the cooked pasta and Parmesan cheese. Toss everything together, adding a little reserved pasta water if needed.
  • Top with fresh basil and serve.
