Cut each chicken breast in half lengthwise. Use a meat mallet or rolling pin to pound the chicken breasts to 1/4". Season both sides of the chicken with salt, pepper, and garlic powder.
Line up 3 bowls. In the first one add the flour, in the second bowl whisk the eggs, and in the third bowl add the Italian breadcrumbs.
Dredge both sides of the chicken in the flour, followed by the eggs, then the breadcrumbs.
Preheat a nonstick skillet over medium heat. Add the olive oil, followed by the chicken. Spray the top of the chicken with olive oil spray.
Cook the chicken for 3 minutes on each side, or until it reaches an internal temperature of 165 degrees.
