Chicken Milanese

Ingredients

  • 2 chicken breasts (approximately 16 ounces total)
  • 1/2 cup all-purpose flour
  • 2 eggs, whisked together
  • 1/2 cup Italian breadcrumbs
  • 1 tablespoon olive oil
  • zero point olive oil spray
  • Salt, black pepper, and garlic powder, to taste

Instructions

  • Cut each chicken breast in half lengthwise. Use a meat mallet or rolling pin to pound the chicken breasts to 1/4". Season both sides of the chicken with salt, pepper, and garlic powder.
  • Line up 3 bowls. In the first one add the flour, in the second bowl whisk the eggs, and in the third bowl add the Italian breadcrumbs.
  • Dredge both sides of the chicken in the flour, followed by the eggs, then the breadcrumbs.
  • Preheat a nonstick skillet over medium heat. Add the olive oil, followed by the chicken. Spray the top of the chicken with olive oil spray.
  • Cook the chicken for 3 minutes on each side, or until it reaches an internal temperature of 165 degrees.
