Thai Chopped Salad with Peanut Sauce

Ingredients
  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup green onions
  • 1/4 cup cilantro
  • 1/2 English cucumber, cut in half, remove seeds then slice
For the dressing:
  • 1/2 cup PB2 Powder
  • 1/4 cup water
  • Juice from 1 lime
  • 1 teaspoon rice vinegar
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon sugar
Instructions
  1. Chop all of the vegetables and add them to a large bowl.

  2. In a small bowl mix together the PB2 Powder, water, lime juice, rice vinegar, low sodium soy sauce and sugar.

  3. Pour the dressing over the salad and mix together.
