Melt the butter in a large skillet. Add the onion and cook for 3 minutes. Add the garlic and cook for 30 more seconds.
Pour in the orzo, and stir for two minutes. Add in the chicken broth and skim milk.
Turn the heat to medium-high and bring to a simmer. Cook for 8 minutes, stirring occasionally.
Stir in the spinach and chicken. Let cook until the spinach is wilted.
Stir in the Parmesan cheese, salt and pepper.
