Sliced Potato Pie

Yield: 6 servings (1 point per serving for purple, 2 points per serving for blue and green)

Ingredients
  • 1 lb. russet potatoes
  • 2 cloves garlic, minced
  • 1/2 teasoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup Parmesan cheese, shredded
  • Olive oil spray
Instructions
  1. Preheat oven to 400 degrees F.

  2. Use a mandoline to slice the potatoes. Add the potatoes to a mixing bowl.

  3. Spray the potatoes with olive oil spray then add the garlic, Italian seasoning, salt, pepper and Parmesan cheese. Mix together.

  4. Spray a pie pan with nonstick cooking spray. Layer the potatoes slices in the pie pan then cover with aluminum foil.

  5. Bake for 20 minutes then remove the foil and bake 25 more minutes.
