Yield: 6 servings (each serving is 1 1/2 cups, 3 points per serving for blue and purple, 5 points for green)
Bring a pot of water to a boil and cook the pasta according to the directions on the box.
Spray a non-stick pan with olive oil spray. Add the chicken and half of the fajita seasoning.
While the chicken is cooking cut the peppers and onion into slices.
Once the chicken is cooked remove it from the pan. Add the peppers and onion to the pan with the rest of the fajita seasoning. Cook for 4 minutes.
Add the garlic to the pan and cook for 30 seconds. Add the cooked chicken, diced tomatoes and half and half and stir together. Stir in the pasta and cook for 5 minutes, or until the liquid is absorbed.
Taste the pasta and season with salt and pepper if needed.
