How to Make Broccoli Cheddar Soup
In a large pot over medium heat, melt the butter. Add onion, celery, and carrot. Cook for 4–5 minutes until softened. Add garlic and cook for 30 seconds.
Add broccoli and chicken broth. Bring to a boil, then reduce heat and simmer for 10–12 minutes, until broccoli is very tender.
Use an immersion blender to blend until mostly smooth (leave some texture if desired).
Lower heat and stir in the almond milk and Dijon mustard.
Gradually stir in cheddar cheese until fully melted and smooth. Do not boil. Taste and adjust seasoning as needed.

- 1 tablespoon butter
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
