Broccoli Cheddar Soup (Low Carb and Weight Watchers Friendly)

Ingredients

  • 4 cups broccoli florets, cut into bite-size pieces
  • 1 small onion, finely diced
  • 1/2 cup celery, finely diced
  • 1/4 cup carrot, finely diced or shredded
  • 2 cloves garlic, minced
  • 4 cups reduced sodium chicken broth
  • 1/2 cup unsweetened almond milk
  • 1 1/2 cups reduced fat sharp cheddar cheese
  • 1 tablespoon butter
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  • In a large pot over medium heat, melt the butter. Add onion, celery, and carrot. Cook for 4-5 minutes until softened. Add garlic and cook for 30 seconds.
  • Add broccoli and chicken broth. Bring to a boil, then reduce the heat and simmer for 10-12 minutes, until broccoli is very tender.
  • Use an immersion blender to blend until mostly smooth (leave some texture if desired).
  • Lower the heat and stir in the almond milk and Dijon mustard.
  • Gradually stir in cheddar cheese until fully melted and smooth. Do not boil. Taste and adjust seasonings as needed.
