Broccoli Cheddar Soup (Low Carb and Weight Watchers Friendly)

Ingredients
4cupsbroccoli florets, cut into bite-size pieces
1smallonion, finely diced
1/2cupcelery, finely diced
1/4cupcarrot, finely diced or shredded
2clovesgarlic, minced
4cupsreduced sodium chicken broth
1/2cupunsweetened almond milk
1 1/2cupsreduced fat sharp cheddar cheese
1tablespoonbutter
1teaspoonDijon mustard
Salt and pepper, to taste
Instructions
In a large pot over medium heat, melt the butter. Add onion, celery, and carrot. Cook for 4-5 minutes until softened. Add garlic and cook for 30 seconds.
Add broccoli and chicken broth. Bring to a boil, then reduce the heat and simmer for 10-12 minutes, until broccoli is very tender.
Use an immersion blender to blend until mostly smooth (leave some texture if desired).
Lower the heat and stir in the almond milk and Dijon mustard.
Gradually stir in cheddar cheese until fully melted and smooth. Do not boil. Taste and adjust seasonings as needed.
