Crustless Low Carb Taco Pie (Weight Watchers Friendly)

The Ingredients

How to Make a Crustless Low Carb Taco Pie
Preheat the oven to 350 degrees F. Spray an 8×8 pan with nonstick cooking spray.
Add the ground beef to a nonstick skillet. Break apart the ground beef then add the onion and red bell pepper.
Once the ground beef is browned and cooked through, drain any excess grease.
Stir in taco seasoning and about ¼ cup water (if using a packet). Simmer for 2–3 minutes until thickened. Stir in the chopped spinach then remove from heat and allow to cool slightly.
In a bowl, whisk together eggs, cream, salt, and pepper.
Spread the taco meat evenly into the baking dish. Pour the egg mixture over the beef. Sprinkle cheese evenly on top.



Bake for 20–25 minutes, or until the center is set and the top is lightly golden.
Let cool for 5 minutes before slicing. Add optional toppings if desired.
Serving Suggestions
Top with fat-free Greek yogurt instead of sour cream for extra protein.
Serve with a side salad or cauliflower rice.
Top with chopped tomatoes, green onions, jalapeños, shredded lettuce, or salsa.

- 1 small red bell pepper, diced
- 1 cup spinach, chopped
- 4 large eggs
- 1/4 cup half and half
- 1/2 cup reduced fat cheddar cheese, shredded
- Salt and pepper, to taste
Instructions

I love your recipes, but I wish you would give the points for the recipes. I don’t receive emails on my phone. I use my laptop and when I hit “click here” it just takes me to the WW site and I can’t go any further.
