Crustless Low Carb Taco Pie (Weight Watchers Friendly)

Ingredients

  • 1 lb. 93% lean ground beef
  • 1 packet taco seasoning
  • 1 small onion, diced
  • 1 small red bell pepper, diced
  • 1 cup spinach, chopped
  • 4 large eggs
  • 1/4 cup half and half
  • 1/2 cup reduced fat cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 350 degrees F. Spray a pie dish with nonstick cooking spray.
  • Add the ground beef to a nonstick skillet. Break apart the ground beef then add the onion and red bell pepper.
  • Once the ground beef is browned and cooked through, drain any excess grease.
  • Stir in taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes until thickened. Stir in the chopped spinach then remove from heat and allow to cool slightly.
  • In a bowl, whisk together the eggs, cream, salt, and pepper.
  • Spread the taco meat evenly into the baking dish. Pour the egg mixture over the beef. Sprinkle cheese evenly on top.
  • Bake for 20-25 minutes, or until the center is set and the top is lightly golden.
  • Let cool for 5 minutes before slicing. Add optional toppings if desired.
