Boursin Cheese Egg Cups (Low Carb and Weight Watchers Friendly)

How to Make Boursin Cheese Egg Cups
Preheat the oven to 375 degrees F. Line a 12-cup muffin tin with silicone cups or spray it with nonstick cooking spray.
In a large bowl, whisk together eggs, egg whites, salt, and pepper.
Evenly divide spinach, bell pepper, and onion among the muffin cups.


Pour the egg mixture over the vegetables, filling each cup a little more than 1/2 full.
Spoon small dollops of Boursin cheese on top of each egg cup.
Bake for 18–22 minutes, or until eggs are set in the center.
Let cool for 5 minutes before removing from the muffin tin.
Serving Suggestions
Pair with fresh berries for a balanced breakfast.
Serve alongside turkey bacon or chicken sausage.
You can store the egg cups in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 30–45 seconds. Freeze individually for up to 2 months for easy grab-and-go breakfasts.
