Easy Turkey Pickle Sandwich – Tastes Just Like Jimmy John’s

This low carb, Weight Watchers friendly turkey pickle sandwich was inspired by Jimmy John’s. Crunchy, tasty, and perfect for leftover Thanksgiving turkey. 

I originally made this recipe because I love the Jimmy John’s Pickle Sandwich and wanted a homemade version.

It’s light but filling and easy to make.

The Ingredients

Dill Pickle: Very low carb, naturally crunchy, and adds tons of flavor without calories.

Turkey Breast: A lean, high-protein option that keeps you full and is perfect for using Thanksgiving leftovers.

Light Mayonnaise: Adds creaminess without the excess calories and fat.

Dijon Mustard: Nearly zero calories and brings bold flavor.

Ultra Thin Swiss Cheese: Adds a savory, creamy element while keeping points low.

Lettuce & Tomato: Adds freshness, fiber, antioxidants, and volume to make the sandwich more satisfying.

How to Make a Turkey Pickle Sandwich Just Like Jimmy John’s

Pat the pickle dry, slice the pickle lengthwise, and scoop out the center.

Add the light mayonnaise and Dijon mustard to one side of the pickle.

Layer the lettuce, tomato, cheese, and turkey.

Secure with a toothpick and enjoy!

Serving Suggestions

I like to have my pickle sandwich with a cottage cheese cup. It’s high protein, creamy, and pairs really well with anything salty or tangy.

Also, a cup of vegetable or chicken soup keeps things light but filling.

A side salad always helps to fill me up. Mixed greens, cucumbers, tomatoes, and a splash of light Italian dressing.

  • 2 oz. oven roasted turkey
  • 1 slice ultra thin Swiss cheese
  • 1 tablespoon light mayonnaise
  • 1 teaspoon Dijon mustard
  • 3 tomato slices
  • Lettuce

Instructions

  • Pat the pickle dry, slice the pickle lengthwise, and scoop out the center.
  • Add the light mayonnaise and Dijon mustard to one side of the pickle.
