Tomato Tortellini Soup

Ingredients

  • 1 teaspoon extra virgin olive oil
  • 1 small yellow onion, chopped
  • 3 garlic cloves, minced
  • 56 oz. crushed tomatoes
  • 4 cups vegetable broth
  • 2 tablespoons fresh chopped basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon sugar
  • 9 oz. three cheese tortellini
  • 3/4 cup fat-free half and half

Instructions

  • Put the oil in a large pot over medium heat. Add the onions and cook for 3 minutes. Add the garlic and cook 1 minute longer.
  • Add the crushed tomatoes, vegetable broth, basil, Italian seasoning, salt pepper and sugar. Bring to a simmer and cook for 15 minutes, stirring occasionally.
  • Use an immersion blender to blend the soup. Add the tortellini and let it simmer for 7 minutes.
  • Turn off the heat and stir in the half and half. Optional - top with more fresh basil.
