Ten Dollar Chicken and Spaghetti

Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 8 oz. spaghetti (uncooked)
  • 2 oz. part-skim mozzarella cheese (I bought a block and cut it into small slices)
  • 15 oz. crushed tomatoes
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried onions
  • 1/4 teaspoon oregano
  • 1/4 teaspoon Italian seasoning
  • 1/4 teaspoon basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  • Pour the crushed tomatoes into a small saucepan. Add the garlic powder, onion powder, dried onion, oregano, Italian seasoning, basil, salt, and pepper. Bring to a simmer, cover and cook on low.
  • Bring a pot of salted water to a boil. Cook the spaghetti according to the directions on the box.
  • Use a meat mallet to flatten the chicken and make sure it's all the same thickness. Season both sides with garlic powder, onion powder, salt, and pepper.
  • Spray a frying pan with cooking spray and add the chicken. Cook 2-3 minutes on each side. Once you flip the chicken top each piece with 1/2 ounce of cheese. Cover the frying pan to melt the cheese or place it under the broiler.
  • Plate the meal by putting 1/4 of the pasta on each plate, top with spaghetti sauce and add a piece of chicken.
