Tasty and Light Bacon Spinach Pasta

Ingredients

  • 8 oz. rotini pasta (weight uncooked)
  • 3 slices center cut bacon, cut into 1/2 inch pieces
  • 2 cups spinach, packed
  • 1/4 cup yellow onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons grated Parmesan cheese
  • 1 cup reserved pasta water (you might not use all of it)

Instructions

  • Cook the pasta according to the package directions. Before draining the pasta reserve 1 cup of the pasta water.
  • Add the bacon and onion to a skillet on medium heat. Cook 5-7 minutes or until the bacon is cooked through.
  • Add the garlic and cook for 1 minute, stirring occasionally.
  • Stir in 1/4 cup of the reserved pasta water. Make sure to scrape up any brown bits from the bottom of the pan.
  • Add the spinach to the pan. Let cook for 5 minutes or until the spinach wilts.
  • Stir in the cooked pasta and grated Parmesan cheese. Add an additional 1/4 cup of the reserved pasta water.
