Summer Veggie Pasta with Lemon Herb Sauce

Ingredients

  • 8 oz. cavatappi pasta
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 zucchini, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 teaspoon lemon zest
  • Juice of 1 lemon
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  • Cook the pasta according to the directions on the package. Before draining the pasta, reserve 1/4 cup of the pasta water
  • While the pasta cooks, heat the oil and saute the garlic for 30 seconds. Add the zucchini and cherry tomatoes. Season with salt and pepper and cook until tender, 5-6 minutes.
  • Stir in the spinach, lemon zest, and lemon juice. Cook until the spinach is wilted.
  • Add the drained pasta and reserved pasta water. Toss to coat.
  • Remove from heat, add the Parmesan cheese, and sprinkle with fresh basil. It can be served warm or cold.
