Skillet Shrimp with Bell Peppers and Zucchini

Ingredients

  • 1 lb. shrimp, peeled and deveined, tails removed
  • 2 teaspoons olive oil
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 medium zucchini, cut into slices
  • 1/2 red onion, sliced thin
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Juice from 1/2 lemon

Instructions

  • Heat the oil in a nonstick skillet. Saute the shrimp for 2-3 minutes per side until pink. Remove from skillet, cover, and set aside.
  • In the same skillet, saute the bell peppers, zucchini, and red onion 5-7 minutes. Add the garlic in the last 30 seconds.
  • Return shrimp to the skillet. Season with Italian seasoning, smoked paprika, salt, and pepper. Toss to heat through.
  • Finish with the fresh lemon juice and serve immediately.
