Ingredients
1lb.shrimp, peeled and deveined, tails removed
2teaspoonsolive oil
1red bell pepper, sliced
1orange bell pepper, sliced
1mediumzucchini, cut into slices
1/2red onion, sliced thin
2clovesgarlic, minced
1teaspoonItalian seasoning
1/2teaspoonsmoked paprika
Salt and pepper, to taste
Juice from 1/2 lemon
Instructions
Heat the oil in a nonstick skillet. Saute the shrimp for 2-3 minutes per side until pink. Remove from skillet, cover, and set aside.
In the same skillet, saute the bell peppers, zucchini, and red onion 5-7 minutes. Add the garlic in the last 30 seconds.
Return shrimp to the skillet. Season with Italian seasoning, smoked paprika, salt, and pepper. Toss to heat through.
Finish with the fresh lemon juice and serve immediately.
