Single Serving Cinnamon Cheesecake (Low Carb & Weight Watchers Friendly)

Ingredients

  • 2 tablespoons reduced-fat cream cheese, room temperature
  • 1 tablespoon fat-free Greek yogurt
  • 1 tablespoon monk fruit sweetener
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon cinnamon
  • 1 egg white
  • Pinch of salt

Instructions

  • Whisk the room temperature cream cheese in a small bowl until smooth.
  • Stir in the Greek yogurt, sweetener, vanilla extract, cinnamon, and salt. Mix until silky.
  • Add the egg white and whisk again until everything is fully combined.
  • Spray a small ramekin with nonstick cooking spray. Pour in the cheesecake mixture.
  • Microwave for 45-60 seconds, stopping as soon as the center is just set.
  • Let it cool before enjoying.
