Shrimp Fajitas

  • 12 oz. raw, peeled & deveined shrimp
  • 2 bell peppers (I used red and orange), cut into strips
  • 1 small onion, sliced
  • 1 tablespoon Chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Juice from 1/2 lime
  • Olive oil cooking spray
  1. Preheat a large nonstick skillet over medium heat.

  2. In a small bowl add the chili powder, cumin, garlic powder, onion powder, oregano, salt and pepper. Mix together.

  3. Add the shrimp to a medium bowl and mix together with the fajita seasoning.

  4. Spray the pan with olive oil spray and add the peppers and onion. Cook for 5 minutes, stirring occasionally.

  5. Push the peppers to the side and add the shrimp. Cook for 2 minutes then turn the shrimp over and cook 2 minutes, or until the shrimp is no longer translucent.

  6. Add the lime juice and stir everything together.
