Yield: 6 servings, 4 points per serving for blue and purple, 5 points per serving for green

  • 10 1/2 oz. Healthy Request Cream of Chicken Condensed Soup
  • 1/2 cup fat-free sour cream
  • 2 fully cooked boneless, skinless chicken breasts (I used a cooked rotisserie chicken)
  • 1 cup riced cauliflower
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon parsley
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup reduced-fat Mexican cheese, shredded (or you can use reduced-fat cheddar cheese)
  • 20 frozen tater tots
  1. Preheat oven to 400 degrees F.

  2. In a large mixing bowl add the cream of chicken soup and sour cream. Stir together, then add the chicken, cauliflower, garlic powder, onion powder, parsley, salt and pepper. Mix together.

  3. Spray an 8x8 baking pan with no-stick cooking spray. Add the chicken mixture.

  4. Sprinkle the cheese over the chicken mixture.

  5. Add the tater tots, then bake for 30 minutes. Enjoy!
