Potatoes O'Brien Breakfast Casserole

Ingredients

  • 3 cups Potatoes O'Brien (thawed)
  • 6 eggs
  • 1/2 cup skim milk
  • 1 cup reduced-fat Mexican cheese, shredded
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 350 degrees F. Spray an 8x8 baking dish with nonstick cooking spray.
  • Add the eggs, skim milk, garlic powder, and salt to a medium mixing bowl. Whisk the ingredients together.
  • Place the thawed potatoes in the bottom of the baking dish.
  • Top the potatoes with the shredded cheese.
  • Pour the egg mixture evenly over the potatoes and cheese.
  • Bake 45-55 minutes, or until the eggs are set in the center.

Notes

To add chopped ham or turkey sausage: Only use 2 1/2 cups of Potatoes O'Brien and add 1/2 cup of ham or chopped turkey sausage.
