Ingredients
1cupBetty Crocker complete buttermilk pancake mix
3/4cupwater
1cupfat free plain Greek yogurt
1tablespoonsugar free pudding mix
Fresh fruit
Instructions
Add water to the pancake mix and whisk until smooth.
Heat a large nonstick skillet and spray with nonstick cooking spray. Pour the batter onto the skillet making 4 pancakes. Cook until bubbles start to form on the batter, then flip.
Let pancakes cook another minute then remove from the skillet. Gently fold the pancakes in half forming a taco shape.
Mix together the yogurt and pudding mix. Fill each pancake taco with the yogurt mixture then top with fresh fruit.
