Pancake Tacos

Ingredients

  • 1 cup Betty Crocker complete buttermilk pancake mix
  • 3/4 cup water
  • 1 cup fat free plain Greek yogurt
  • 1 tablespoon sugar free pudding mix
  • Fresh fruit

Instructions

  • Add water to the pancake mix and whisk until smooth.
  • Heat a large nonstick skillet and spray with nonstick cooking spray. Pour the batter onto the skillet making 4 pancakes. Cook until bubbles start to form on the batter, then flip.
  • Let pancakes cook another minute then remove from the skillet. Gently fold the pancakes in half forming a taco shape.
  • Mix together the yogurt and pudding mix. Fill each pancake taco with the yogurt mixture then top with fresh fruit.
