Olive Garden Copycat Margherita Chicken

Ingredients

  • 1 lb. boneless, skinless chicken breast
  • 1 tablespoon light butter
  • 2 garlic cloves, minced
  • 1/4 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 2 oz. fresh mozzarella
  • 2 tablespoons pesto
  • 1 cup cherry tomatoes, cut in half
  • Salt, pepper, and garlic powder, to taste

Instructions

  • Preheat a grill pan over medium heat. Season the chicken breasts with salt, pepper, and garlic powder.
  • Spray the grill pan with nonstick cooking spray and add the chicken breasts. Cook for 3-4 minutes on each side or until the internal temperature reaches 165 degrees F.
  • Melt the butter in a small frying pan and sauté the garlic for about a minute. Stir in the chicken broth and lemon juice, then heat through.
  • Pour the sauce into a baking dish, then add the chicken and top it with fresh mozzarella. Add the tomatoes to the baking dish.
  • Place under the broiler until the cheese has melted then top each chicken breast with 1/2 tablespoon of pesto.
