Low Sugar Blueberry Jam (No Pectin)
Yield: 18 servings (each serving is 1 tablespoon, 1 point for blue, green and purple)

- 1 lb. blueberries
- 1/2 cup granulated sugar
- 1 tablespoon fresh lemon juice
- Pinch of salt
Rinse the blueberries with water. Add them to a saucepan with the sugar, lemon juice and salt.
Cook over medium heat until the sugar dissolves. Turn the heat to medium high and let the blueberries come to a boil. Boil for two minutes stirring occasionally.
Use a potato masher to break down the blueberries. Reduce heat to medium low and simmer for 20 minutes.
Remove from heat and let cool. Store jam in the fridge in an airtight container.
