Low Sugar Blueberry Jam (No Pectin)

Yield: 18 servings (each serving is 1 tablespoon, 1 point for blue, green and purple)

Ingredients

  • 1 lb. blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon fresh lemon juice
  • Pinch of salt

Instructions

  • Rinse the blueberries with water. Add them to a saucepan with the sugar, lemon juice and salt.
  • Cook over medium heat until the sugar dissolves. Turn the heat to medium high and let the blueberries come to a boil. Boil for two minutes stirring occasionally.
  • Use a potato masher to break down the blueberries. Reduce heat to medium low and simmer for 20 minutes.
  • Remove from heat and let cool. Store jam in the fridge in an airtight container.
