Cut eight small circles from the tortillas (the size of a street taco), lightly spray, and air fry four of the circles at 380 degrees F for 4-6 minutes, until crispy.
Brown the lean ground beef, drain any excess grease, then add taco seasoning and water. Simmer until thickened.
Layer in the center of the four burrito-sized tortillas: taco meat, cheese, crispy tortilla round, sour cream, lettuce, tomatoes, and a small tortilla piece on top.
Fold edges of the tortilla inward in sections to seal.
Cook seam-side down in a skillet for 2-3 minutes per side, or air fry at 380 degrees F for 5-7 minutes until golden brown.
